Today I am sharing my favorite smoothie recipe. I drink this smoothie nearly every day. I’ll either have it as a late morning/late afternoon snack or I’ll make extra to have as my breakfast meal and drink it throughout the morning, keeping me feeling full until lunchtime. It is rich in antioxidants and iron, and tastes delicious!
Ingredients (brands that I use):
- 1 cup frozen mixed berries (Nature’s Touch Organic 4 Berry Mix – blackberries, blueberries, raspberries & strawberries)
- 1 small (or 1/2 large) banana (Chiquita-Organic)
- 1 cup (packed) organic baby spinach (Nature’s Promise-Organic)
- 1 tablespoon peanut butter (Organics-No Stir Creamy)
- 1/4 cup non-fat plain Greek yogurt (Chobani)
- 1/4 cup coconut water (Vita Coco)
- 1/2 cup ice
Directions: Combine all ingredients in a blender (adding the ice last) and blend on high until smooth.
Some helpful tips:
- For a thinner consistency, add extra coconut water.
- For a dairy-free version, replace the Greek yogurt with almond milk yogurt.
- Throw in some protein powder for a post-workout snack.
- If you are on the hunt for a blender, I recommend the Ninja Professional Blender (BL610) – I’ve had it for over two years and it still works great. It is easy to clean and very durable.
- I recommend the book, Superfood Smoothies: 100 Delicious, Energizing & Nutrient-Dense Recipes by Julie Morris. I started drinking smoothies regularly several years ago after coming across this book. Not only does the author share simple recipes with healthy ingredients, she also provides an overview of how to build a smoothie, the nutritional benefits and substitutes for the ingredients she uses, and a guide on which smoothies to drink for specific benefits (beauty, cleansing/detoxing, heart health…).
